So, a quick low carb update.
I am officially down 40 pounds. And that is with muscle gain.
I have been steady and true to my new way of eating since March of 2012. I have never felt better.
This cookie and M&M popping on the couch at night mom has found her new ‘nighttime snack’.
Buffalo Spiced Cocktail Nuts.
They are especially good with 2Tbsp of Marie’s Chunky Bleu Cheese dressing to dip them in!
I found this recipe for this WONDERFUL treat at All Day I Dream of Food be sure to visit. She has some amazing things going on there.
Buffalo Spiced Cocktail Nuts
2 cups mixed raw nuts (pecans, almonds, cashews)
2 tbsp melted butter
2 tbsp hot sauce (Frank’s Hot Sauce is the Buffalo wing standard)
1 to 2 tsp cayenne powder (or more, if you dare!)
1/4 tsp onion powder
1/4 tsp garlic powder
1/2 tsp salt
Preheat oven to 350F and line a baking sheet with parchment.
Mix all ingredients together in a medium bowl. Spread in a single layer on prepared baking sheet and bake 8 to 12 minutes, stirring occasionally.
Let cool on pan and serve.
Serves 8. Each serving has a total of 5.5g of carbs and 2.5g of fiber. Total NET CARBS = 3g.
